About the Author
Philip Preston is the President of PolyScience and an avid inventor and home cook. His childhood was spent watching his Belgium-born mother create wonderful food and he was steeped in the family business founded by his father. Over the course of several decades, he has helped pioneer modern cooking by bringing laboratory techniques to the kitchen. PolyScience is the leading manufacturer of sous vide circulators which are used in the finest kitchens here in the United States and across the globe. Throughout the years, he has appeared as a judge on Iron Chef America, served as a presenter for Next Iron Chef, and has been featured in Food & Wine magazine and Time Magazine. His work in the culinary arts has made him a three-time winner of the Star Chef's Award for Technology, Food Network's Tasty Technology Award, and winner of Madrid Fusion Technology Award. He lives in the Chicago area where he is actively developing an urban farm with his wife, Alissa, and their three children.

We are big fans of Poly Science and have several of their sous vide machines in our kitchen, so it's hard to slam them too much. However, this book should be made available for free as it's nothing more than a promotional piece for the company and their products. Recipes are nothing special and you could find them on the internet with little effort. If you are interested in Sous Vide cooking, keep looking as there are better books out there by authors like Keller, Logsdon and Myhrvold. Sadly, Preston is not one of them. Sorry Philip.

Dear coleagues. Unfortunatelly I believe that write this text is the best way that someone can hear me. If not Polyscience, I hope that possible polyscience's customers can hear me seriously, since polysciente did not hear me. I bought the sous vide creative professional and just before complete one year the water circulator stop to work. I google the problem and for my surprise I realized that this problem is very frequent in this product. I believe that U$ 400 product is quite expensive and also, someone should told me that is was a disposable product or one year product. For my surprise, the warranty worlwide promissed me at the purchase moment was not true. This is the world. What I can do is spread this information and help other customers not be betraid. Regards
